賽海蜇拌火鴨絲 Shredded Roast Duck with Snow Fungus
    一、Ingredients:
    原料:
    1/4 roast duck;
    燒鴨1/4只;
    1 oz snow fungus;
    1.___________________________
    2 tbsp browned sesame seeds;
    炒香芝麻2湯匙;
    1 shredded red chilli;
    2.___________________________
    二、Seasoning:
    調(diào)味:
    1 tbsp oil;
    油1湯匙;
    1 tbsp sesame oil;
    麻油1湯匙;
    1/2 tsp chicken powder;
    3._____________________
    2 tbsp light soy sauce;
    生抽2湯匙;
    3/4 tsp sugar;
    糖3/4茶匙;
    1/4 tsp salt ;
    鹽1/4茶匙;
    1/2 tbsp lemon jam, Chinese or western style(mix the above seasoning together)
    檸檬果醬用中式或西式均可(把以上用料拌勻)
    三、Method:
    做法:
    1. Soak snow fungus in water for about an hour. Wash. Remove firm parts
    1、銀耳用清水浸至發(fā)大,約浸1小時(shí),洗凈,把硬的部分切去。
    2. Tear snow fungus into small pieces.Parboil in boiling water for 10 minutes.Rinse with cold boiled water. Drain well.
    2、銀耳撕成小朵,放入滾水中煮10分鐘,撈起用冷開水浸冷,取起抹干水。
    3. Marinate snow fungus with seasoning for half an hour.
    3、銀耳加入調(diào)味拌勻,腌半小時(shí)。
    4. Remove flesh from rost duck. Shred.
    4、取下烤鴨上面的肉,切碎。
    5. Mix and dish roast duck, snow fungus and red chilli on plate Sprinkle with sesame seeds
    5、燒鴨絲、銀耳、紅椒絲拌勻盛大碟上,灑下芝麻。
    ps:海蜇質(zhì)爽脆,用拌海蜇的調(diào)味料及方法拌銀耳,同樣美味,這是菜譜名稱的來源
