折耳根最重要的吃法有兩種：

一、折耳根炒臘肉——折耳根是fish mint，炒是stir-fry，臘肉是smoked pork(熏過的豬肉)，而且炒折耳根的臘肉一般是切成片狀的，也即sliced smoked pork，合起來就是：
